I haven't read this in a while, I'm not sure if they say what the top is, but this was the very first blog post from the Hay Shop:

From the Hays blog: "as for the wood, they are made from a variety of species (oak, beech, maple, and long leaf yellow pine for the tops and skirts and oak or pine for the legs).  The key here is finding a good combination of durability, local availability, and low cost. "
