Inside of desks, chests etc.

On a desk or highboy or such, are the experts (you guys) putting any shellac finish on the insides to balance it out. Is it ok to just finish the outside of the desk, chest etc?

Just finish the outside, there is no balancing act.

It's traditional to leave the interior surfaces of case work unfinished with the obvious exception of the writing compartments of bureaux, secretaires etc. and some cabinet doors.

As msiemsen says, sealing interiors would balance nothing (and would likely make drawers stick).
