Depending on the curve I always cut my rails out of a solid piece. You could always add a thin piece of veneer to the front edge if you do not like some end grain showing. I did not find this to be a problem as your eye will go to other parts of the sideboard. No pictures were attached...
I glued the bottom M&T and elongated the holes in the middle and upper tenons. I kept the sides a little shy of touching the underside of the top (for movement) because a molding was applied under the top and this covered the gap.

I have 3 hard maple top workbenches, 27-29"D x 8'L x 35-37" tall. Make you workbench whatever is best for you. There is no "rule of thumb" for a workbench size. I wish mine were a few inch deeper. In my opinion a workbench can never be big enough!

Perhaps both methods depending upon their skill level. Do whatever is easiest for you. Or try the harder method and test your skill level. You will never know until you try! I have seen very skilled carvers apply the carved shells.

I had this problem and I knew I would. So I left the background a little thicker (1/32-1/16") and then re-leveled the background to get rid of the marks. Yes, it is a lot of work and that is probably why must woodworkers carve the shells separately and then add them on.

I made a highboy for a customer in the 1990's and I glued all the M&Ts in the lowboy part and put the panels under clamped tension. A few months later he returned the lowboy because the sides cracked (they could not move). I re-built the lowboy but glued only one M&T and elongated the other...
When I was in business I never had/used drawings/plans. You do not need them. Just scale the drawing and them make a make a formula/equation. Much easier!
